Potatoes for frying, extra virgin olive oil, salt
For the brave sauce:
30 gr. of extra virgin olive oil
20 gr. of flour
6 gr. of sweet paprika
6 gr. of spicy paprika
190 gr. of broth of the stew
We prepare the sauce that we can serve hot or cold.
We put the oil in a saucepan and heat it without getting to smoke. We also heat the boiled broth in the microwave.
Once the oil is hot, put the paprika in the saucepan, beat with a manual whisk and add the flour, integrate well, add a little salt and add little by little stew broth Put the saucepan back on the fire to the minimum and continue beating until the sauce thickens.
Peel the potatoes, wash them, dry them with kitchen paper and cut them into irregular pieces but more or less the same size that are fried equally.
Heat the oil in a pan over medium heat, toss the potatoes dry and leave a few minutes to be done inside, raise the heat and fry until golden brown. we serve with the sauce.
